I found this delicious recipe on Carlsbad Cravings, how to make Caprese chicken pasta! It ended up to be really delicious. Using delicious balsamic chicken marinade with hints of Dijon, garlic and basil, and lemon juice that is tossed with tomatoes, asparagus and zucchini along with some fresh garlic, olive oil and pepper and salt.. not only was there flavour busting chicken, but delicious vegetables too! There's also a tasty amount of cheese, my fav! Freshly grated Parmesan and mozzarella pearls were included, and extra grated Parmesan!
The marinade process takes 2-8 hours, but the cooking is about 40 minutes to an hour, depending on how you'd prefer. If you'd like to check out the instructions, please click on the source link up above! The Caprese chicken pasta recipe serves 6 people, and has the following ingredients:
- 1 pound boneless skinless chicken breasts
Balsamic Chicken Marinade:
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 2 teaspoons brown sugar
- 1 tsp EACH dried basil, garlic powder, onion powder,
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Roasted Vegetables:
- 1 12 oz. pkg cherry tomatoes
- 1 small zucchini, halved and sliced
- 1/2 bunch asparagus, ends trimmed, cut into 1” pieces
- 4-6 garlic cloves, minced
- 1 tablespoon olive oil
- 2 tablespoons Reserved marinade (in directions)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Pasta:
- 1 pound linguine or thin spaghetti
- 1 cup reserved pasta water
- 1 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- 1/4 cup loosely packed fresh parsley, chopped
- 1/4 cup loosely packed fresh basil, chopped
- 1 cup freshly grated Parmesan cheese, more or less
- 1 cup mozzarella snacking balls or pearls, more or less
- Serves 6.
- Delicious mix of flavours from the chicken and vegetables.
- Time consuming, marinating takes 2-8 hours, and cooking takes further time.
Overall, it was delicious, and I definitely recommend this recipe!
