This weekend I prepared this chicken recipe as well as ribs. Normally I find that chicken gets a ho hum reaction. This butter roasted chicken is an exception that gets lots of compliments. Truthfully, with this much butter its hard to go wrong. The only change I made to the recipe is that rather than smoke-roasting the chicken for an hour at 400 F, I cooked it at 250 F for about 3 hours. I made this change to go along with the ribs that were also on the smoker.
