I am a huge fan of this Mini Meat Loaf Sheet-Pan Meal recipe from Taste of Home. I love meat loaf, and this adapted recipe allows for the baking process to take much less time, allowing me to enjoy it sooner and spend less time occupied with watching the oven. The sauce topping was quite delicious and I enjoy that you can add potatoes, asparagus, or any other veggies to make the meal easier and healthier.

The following ingredients were used:
- 2 large eggs, lightly beaten
- 1 cup tomato juice
- 3/4 cup quick-cooking oats
- 1/4 cup finely chopped onion
- 1/2 teaspoon salt
- 1-1/2 pounds lean ground beef (90% lean)
- 1/4 cup ketchup
- 3 tablespoons brown sugar

I really enjoyed this recipe, both in making it and in eating it. It was quick and simple, took much less time than a regular-sized meat loaf, and tasted just as good, if not better. I recommend this recipe wholeheartedly!
