When I think of rhubarb, I think of the spring and summer season. I have been sick of winter product lately, so I was really excited when I saw the recipe for Rhubarb Crisp on Delish. Finally, a light and delicious seasonal treat! The recipe turned out to be fantastic, and the dish was a complete success.
I could see myself using this recipe with other types of fruits or vegetables as well and alternate the ingredients for different years. All in all it's an excellent method of cooking.

The following ingredients were used:
FOR THE FILLING
- 4 1/2 c. sliced rhubarb (about 6 stalks)
- 1 tbsp. lemon juice
- 1/3 c. granulated sugar
- 1/4 c. packed brown sugar
FOR THE TOPPING
- 6 tbsp. melted butter
- 1/2 c. all-purpose flour
- 1/2 c. rolled oats
- 1/2 c. finely chopped pecans
- 1/2 c. packed brown sugar
- 1/4 c. granulated sugar
- 1/2 tsp. kosher salt
- 3/4 tsp. ground cinnamon
- 1/4 tsp. ground ginger
