I've been on the lookout for some excellent new breakfast-themed recipe. While browsing Delish recently, the recipe for Loaded Cauliflower Breakfast Bake caught my eye. It's a low-carb breakfast bake featuring riced cauliflower instead of hash browns, but keeps all of the delicious fillings that make this bake worthy.
This recipe can easily be modified, such as using diluted heavy cream to further cut carbs, or adjust the preferred fillings. I think it's an excellent low-carb meal for breakfast, lunch, or even dinner.

The following ingredients were used:
- 1 large head cauliflower
- 8 slices bacon, chopped
- 10 large eggs
- 1 c. whole milk
- 2 cloves garlic, minced
- 2 tsp. paprika
- Kosher salt

- 2 c. shredded cheddar
- 2 green onions, thinly sliced, plus more for garnish
- Hot sauce, for serving

I had a great time trying out this recipe. There is plenty of room to play with the ingredients, so I think I will definitely keep this on hand as a new fave breakfast meal.
