I've been reading Jamie Oliver's cookbook, Jamie's Ministry of Food, and came across a recipe for chicken fajitas with homemade guacamole & salsa. It's super easy to make, serves 2 and cooks in just 25 minutes! Perfect for a quick dinner.
The ingredients list is varied, with the homemade guacamole containing 1 small handful of mixed-colour ripe cherry tomatoes, 1/2-1 fresh red chili, a few sprigs of fresh coriander, 1 ripe avocado and 1 lime. The homemade salsa is made with 1/2-1 fresh red chili or whatever is preferable to your taste, 15 ripe cherry tomatoes, 1 bunch of fresh coriander, 1 lime and extra virgin olive oil. For the rest of the meal, 1 red pepper, 1 medium red onion, 2 skinless free-range chicken breasts, 1 teaspoon smoked paprika, 1 small pinch of ground cumin, 2 limes, olive oil, 4 small or 2 large flour tortillas, 150 ml fat-free natural yoghurt and lastly, 50g of cheddar cheese.
Cooking the fajitas and making the salsa and guacamole was very simple. It looked and smelt delicious the whole time. I personally like making them a bit spicier than what was indicated in the recipe, but I loved the recipe. I'll definitely be making this more often, and highly recommend it to be checked out by others.
