I've been on the hunt for some new holiday recipes when I came across the Beef Tenderloin recipe from Delish. It was exactly what I was looking for! Although it looks intimidating, this recipe is insanely easy to make, and has a surprisingly quick cook time. The homemade creamy horseradish sauce was quite the treat, too!

The following ingredients were used:
FOR BEEF
- 1/2 c. extra-virgin olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. whole grain mustard
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 1 dried bay leaf
- 2 cloves garlic, smashed
- 2 tbsp. honey
- 1 (2-lb.) beef tenderloin, rested at room temperature for 1 hour
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 2 tsp. fresh rosemary, finely chopped
- 1 clove garlic, minced
FOR YOGURT SAUCE
- 1/2 c. Greek yogurt
- 1/4 c. sour cream
- 1 tsp. prepared horseradish
- Juice of 1/2 lemon
- Kosher salt
