I was inspired by a Fave I saw today about a cemetery cake for Halloween, and got into a baking mood! After searching for a neat recipe, I came across the Batty Chocolate Mint Cheesecake recipe on the Food Network's website. It looks very cute, and cheesecake is one of my favourite desserts - so I gave it a go!
The cheesecake has a chocolate brownie base topped with a delicious creamy mint filling. I love how the green tint adds an eerie touch, and that it is topped with a storm cloud of whipped cream with bats flying over top. So delightful!

The follow ingredients were used:
Brownie Base:
- 1/3 cup boiling water
- 2 oz unsweetened chocolate, chopped
- 1 cup granulated sugar
- 1/3 cup mayonnaise
- 1 large egg, at room temperature
- 1 large egg yolk, at room temperature
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- ½ cup all-purpose flour
- ¼ cup cocoa powder
- ½ tsp salt
Cheesecake:
- 3 pkg (750 g) cream cheese, at room temperature
- 1 cup plus 2 Tbsp granulated sugar, divided
- 1 cup sour cream (full-fat), divided
- 2 Tbsp cornstarch
- 1 Tbsp vanilla extract
- 1 tsp peppermint extract
- 2 large eggs, at room temperature
- 1 large egg yolk, at room temperature
- leaf green food colour paste, for cheesecake
- Kelly green food colour paste, for sour cream top
Batty Décor:
- ¾ cup chocolate cookie crumbs
- 1 cup whipping cream
- 2 Tbsp granulated sugar
- 1 Tbsp skim milk powder
- Black food colouring paste
- 5 - 6 oz black coloured fondant
- small bat cookie cutter or template
- Silver Dragees (for eyes)
- Floral wire or bamboo skewers
- Quick royal icing "glue"
- Doesn't take too long to prep and cook.
- Serves a lot of people.
- Perfect for the Halloween season, nobody can resist cheesecake!
