I've simply fallen in love with this Taco Stuffed Sweet Potatoes recipe from Delish! It has a great Tex-Mex spin on stuffed sweet potatoes by combining them with ground turkey, onion, carrots, tomatoes, and taco seasoning.
It's as simple as roast and assemble the sweet potato boats, then top with sour cream and hot sauce! The fillings can easily be modified or adjusted to preference, and you can even swap out hot sauce for burrito sauce or another handmade delight.

I had a great time whipping up this recipe. It is not difficult at all, is perfect for any season, and can feed a family with ease. Add the fact that it's easily modifiable, it makes for a perfect recipe.
