I've been searching for a new recipe for my healthy eating collection, and I think I've found the perfect one! The healthy chicken stir fry recipe on Wholefully.com is a great way to get in a ton of veggies into a weeknight dinner. Serve it over brown rice, and you've got the best recipe for fiber and greens! I think this stir fry may end up becoming a staple in my home!
This recipe takes just 30 minutes total time, and it's highly adaptable! If you don't like some of the ingredients, you can switch them out for something else. If you want to use shrimp instead of chicken, you can do just that! It's great for people like me who love to spice things up every now and again but still love to eat healthy. You can even make it meatless or gluten free! If you need to save more time, use a bag of frozen stir fry.
To break down the recipe, the prep time is 15 minutes and the cook time is another 15 minutes. It yields 4 large servings. The ingredients are broken up into two sections, and are as follows:
For the marinade:
- 1/4 cup soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 tablespoon rice wine vingear
- 1/2 teaspoon red pepper flaes
- 1 pound chicken breasts, cut into bite-sized pieces
For the stir fry:
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 3 large carrots, peeled and julienned
- 1 large red bell pepper, julienned
- 1 large yellow bell pepper, julienned
- 1 cup snow peas, sliced into 1'' pieces
- 8 ounces button mushrooms, sliced thinly
- 2 cups frozen broccoli, defrosted
- 1 tablespoons cornstarch or arrowroot powder
- 4 cups cooked brown rice
- sliced green onions and toasted sesame seeds, for serving
The instructions are super simple!
Step one: Whisk together the lemon juice, soy sauce, sesame oil, honey, rice wine vinegar, and red pepper flakes in a medium-sized bowl. Add in the chicken, and toss to coat. Let it marinate in fridge while you chop your veggies.
Step two: When you have finished chopping your veggies, heat a large wok over high heat. Add one tablespoon of the olive oil.
Step three: Drain the chicken from the marinade, reserving it. Add the chicken to the wok and cook until the chicken is cooked through, which should be about 5 minutes. Remove the chicken to a plate.
Step four: Add the remaining olive oil to the wok, and then add in the garlic. Cook for about a minute or until fragrant. Add in the carrots, bell peppers, snow peas, and mushrooms. Cook until bright in colour and just crisp cooked, about three minutes.
Step five: Add in the broccoli and cooked chicken. Reduce heat to low.
Step six: Whisk the cornstarch into the reserved marinade, and then pour into the wok. Bring to a simmer wand cook until thick, which should be about five minutes. Serve on top of Minute Brown Rice, which should just take a few minutes to cook, and top it with green onions and roasted sesame seeds.
