I've really been feeling passionate about cooking lately, and have been craving more healthy meals that can be made in 30 minutes or less. I found this amazing recipe for Steak Fajita Burrito Bowls on Joyful Healthy Eats' website that are done in 30 minutes, and have become a favourite! Flavourful Fajita meat, sautéed peppers & onions, quinoa, corn, avocado and my favourite salsa make this Burrito Bowl absolutely irresistible.
The prep time is 5 minutes, with a cook time of 30 minutes, for a total time of 35 minutes. It serves 4 and is perfect for beginners. It is gluten free, and kid friendly! The following ingredients were used:
- 1 lb. of skirt steak
- 3/4 cup fresh cilantro
- 1/4 cup fresh oregano
- 1 garlic clove
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 tablespoons of olive oil
- 1 red onion, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 green pepper sliced
- 1 cup quinoa
- 2 cups water
- 13.5 oz. can corn kernels, no salt or sugar added
- 2 avocados, sliced
- 4 cups green leaf lettuce, sliced
- optional: top with salsa
- Gluten free.
- Kid friendly.
- Healthy.
- Not a difficult recipe.

I love the tush of flavours, from the Fajita mean to the sautéed peppers & onions, quinoa, corn, avocado - even the salsa makes it all the more amazing! It's open to modifications, and can be equally as tasty with chicken instead of steak.
