As with every New Year, I've decided to start January off right by dedicated the month to healthy eating and decided to try out a paleo diet. I am a big fan of meatloaf, so when I saw the recipe for Easy Paleo Meatloaf, I was very excited to try it. I know there are several ingredients in traditional meatloaf that aren't paleo-friendly, but this recipe does an excellent job adapting the recipe to be paleo-friendly.

The following ingredients were used:
- Cooking spray
- 2 tbsp. extra-virgin olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp. dried oregano
- Kosher salt
- Freshly ground black pepper
- 2 lb. ground beef
- 1/2 c. almond flour
- 2 large eggs
- 2 tbsp. coconut aminos, divided
- 1/4 c. tomato paste
- 2 tbsp. apple cider vinegar
- 1/2 tsp. garlic powder
- 1/4 tsp. mustard powder
- Pinch cayenne pepper

I was very surprised with how great this recipe turned out. Despite skipping the ketchup, swapping almond flour for breadcrumbs, and adding coconut aminos, this meatloaf came out superb. I'm excited to try this again sometime soon!
