Oven-Roasted Pulled Pork
- 1 tbsp. ground cumin
- 1 tbsp. ground coriander
- 1 tbsp. paprika
- Kosher salt
- Freshly ground black pepper
- 1 7-pound bone-in, skin-on pork butt or shoulder, cut into 3 pieces
- 1/2 c. apricot jam
- 2 medium onions, thinly sliced
- 4 jalapeños, seeded and thinly sliced
- Thick-sliced white bread, for serving
- Sweet-and-Spicy Sauce
- 1 c. apple cider vinegar
- 1/4 c. ketchup
- 1 tbsp. brown sugar
- 1 tbsp. granulated sugar
- 1/2 tsp. red pepper flakes
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- Delicious sauce and succulent pulled pork
- Easy to cook, oven does all the work
