I've been searching for healthy recipes to put together as me new go-to list of foods when I came across the delicious recipe for Avocado Egg Boats. I really enjoy avocado as is, so whenever I get the chance to try a new avocado recipe, I go for it! I'm very glad I did as this has become my new fave way to eat the power fruit.
Avocados have such a creamy texture that pairs so well with a just set egg and crispy bacon. This recipe can even be easily modified with the addition of cheese, sausage bits, or some veggies to top it. This recipe can be a perfect power breakfast or a healthy snack during any season.
